Bikini Recipe

Yields 10 guests

For the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

For the Drink (yields 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Method

Making the Citrus Syrup: Put every items into a pot, heat until it reaches a light boil, mixing to dissolve. After that, take off the heat and leave to cool entirely. Pour to a sterilised bottle, seal and refrigerate it in the refrigerator, where it will keep for about a month.

Preparing the Premix: Mix all the liquids into one sizeable container, let it rest for one hour, then strain preferably using a fine cloth, to ensure it's perfectly clear.

To serve: Add 85ml from the premix into your cocktail shaker filled with ice, and stir lightly for about 60 seconds until cold. Filter into a cold coupe glass or equivalent, garnish with some cranberries adding the final touch by giving it a brief mist with the mandarin essence above the glass.
